So today I was craving pumpkin muffins. I do that. BUT, I started Weight Watchers last week so that means making muffins with no oil. Which means they stick like crazy to the muffin cups. A while back I found some silicone muffin cups in the clearance bin somewhere (Target? Safeway? I dunno.) Anyway, they had to be about a dollar for 12. Something like that. Anyway, I washed them and promptly put them in the back of the cupboard where they lay totally forgotten until today.

Mmmmm...muffins.
The verdict:

Voila!
Awesome. I didn’t spray them with anything at all and the muffins pop right out. The toughest part is going to be retraining the kids NOT throw the cup away and put it in the sink instead. Dollar well spent.

Here is a healthy muffin recipe that I often make. Perhaps those nifty muffin cups will work. Not sure if it is on the WW list. Happy eating!

Muffin Recipe (Julie Versaw’s recipe)
¼ cup honey (Julie says she uses 1/3 – ½ cup)
1 ¼ cup orange juice
1 cup oatmeal
1 cup raisins (cranraisins, dates, whatever combination that appeals to you)
Let above set overnight in frig. for an hour or so out on the counter.
Add:
1/3 cup powdered milk
1 egg
1 1/4 cup whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1 cup chopped nuts (optional)
½ (or more) grated apple – I often add applesauce
Spray muffin tins and spoon in – Bake at 325 for 20 minutes. Cool for 5 minutes, then remove from pan – Yummy!

if you have a dishwasher – turn them insde out when you put them in. they will actually come up clean if you do. if you put them in like normal, they will have lots of muffin left in them
to be honest, it’s probbly the least trouble to just wash them by hand. but i’m still hapy to know that the turning inside out thing works!
oh, but, don’t the bright colours make the muffins look great?

I actually tossed all the silicone baking dishes I had received because I hated the way the bread (or whatever I was cooking) wouldn’t rise as well (because the silicone walls are elastic). But, these muffin holders look fantastic!

I agree, these muffin cups are awesome. I made (not-so-low-calorie) strawberry chocolate chip muffins yesterday in the silicon muffin cups, all I can say is they are perfect! No scrubbing off cooked-on muffin batter around the sides, and they did indeed look great.
